Jicama & Apple Slaw

I think we are missing the boat on Jicama (Hee-Ka-Mah)  here in the US.  It is sweet, crunchy, full of fiber, vitamin C and low in calorie.  Here is a favorite side dish featuring the humble jicama!

Ingredients:

  • 1 cup peeled, julienned jicama
  • 1 cup julienned carrots
  • 1 cup peeled, julienned apples
  • 1 tablespoon of fresh. chopped cilantro
  • 3 Tablespoon of fresh juiced lime
  • 1 Tablespoon of rice wine vinegar
  • 3/4 cup extra virgin olive oil
  • Salt & pepper to taste

Instructions:
Mix the vinaigrette by combining the lime juice, rice wine vinegar and olive oil.  Set aside
Place julienned  jicama, apples and carrots in a large bowl
Whisk the vinaigrette to incorporate and toss with fruit/vegetable mix.
Salt and pepper to taste
For best flavor, rest in the refrigerator 30 minutes or more

Time: 15 minutes plus resting time
Yields: 4 servings

Helpful tools: a julienne peeler.  Mine came from The Pampered Chef
