I think we are missing the boat on Jicama (Hee-Ka-Mah) here in the US. It is sweet, crunchy, full of fiber, vitamin C and low in calorie. Here is a favorite side dish featuring the humble jicama!
Ingredients:
- 1 cup peeled, julienned jicama
- 1 cup julienned carrots
- 1 cup peeled, julienned apples
- 1 tablespoon of fresh. chopped cilantro
- 3 Tablespoon of fresh juiced lime
- 1 Tablespoon of rice wine vinegar
- 3/4 cup extra virgin olive oil
- Salt & pepper to taste
Instructions:
Mix the vinaigrette by combining the lime juice, rice wine vinegar and olive oil. Set aside
Place julienned jicama, apples and carrots in a large bowl
Whisk the vinaigrette to incorporate and toss with fruit/vegetable mix.
Salt and pepper to taste
For best flavor, rest in the refrigerator 30 minutes or more
Time: 15 minutes plus resting time
Yields: 4 servings
