I think I really discovered a love for margaritas while living out west near the Mexican border. Back in those days, you could cross the border with a Driver’s license. We spent many Sundays in a small border town having amazing margaritas. Here is my reconstruction of those sunny days. I am a purist, it is all about good tequila and fresh juice. No mixes here. Let me know what you think!
INGREDIENTS
FOR A MARGARITA (who makes those):
- 1 1/2 ounces good tequila
- 1 ounce Grand Marnier orange liqueur
- 3/4 ounce freshly-squeezed lime juice
- Demarera Sugar for simple syrup
- Ice
- Lime wedges
- Kosher salt for rimming the glass
FOR A PITCHER OF MARGARITAS (16 SERVINGS):
- 3 cups good tequila
- 2 cups Grand Marnier orange liqueur
- 1 1/2 cups freshly-squeezed lime juice
- Demarera Sugar for simple syrup
- Ice
- Lime wedges
- Kosher salt for rimming the glass
INSTRUCTIONS
- Simple Syrup Bring 3/4 cup of water to a boil. Turn off heat and stir in 1 cup of Demarera Sugar. Allow to cool.
- Salting the rim Run a lime wedge around the top rim of your glass. Fill a small plate with salt, then dip the rim until it is well coated. Set aside.
- Make the margarita Combine tequila, orange liqueur, lime juice and ice in a cocktail shaker. Shake for about 30 seconds (always shake citrus). Add a touch of simple syrup if needed.
- Serve. Fill serving glass with ice and your marvelous margaritas. Garnish with a lime slice and enjoy!
