Smokey Homemade Pimento Cheese

I have never really like pimento cheese (gasp).  I know, it’s a Southern staple, I just don’t like it… until I found this.  This recipe does use cow dairy but there are some great sheep and goat alternatives.

INGREDIENTS:

  • 1/2 cup shredded extra-sharp white cheddar cheese (cow dairy)
  • 1/2 cup smoked Gouda (cow dairy)
  • 1/2 cup cheddar
  • 1 cup Dukes mayonnaise (or any mayonnaise not sweet miracle whip)
  • 1/2 (4-ounce) jar pimentos, drained very well and chopped
  • 1/4 teaspoon of ground garlic
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • Top with fresh herbs or paprika (nightshade)

INSTRUCTIONS:

  • Mix to combine
  • Serve on an old flip flop or whatever you have handy
