Hawaiian Loco Moco

When we were living in Oahu while my husband was stationed in Hawaii, we discovered this ONO dish (Hawaiian for delicious) within our first few days… and it quickly became a favorite. It’s the kind of meal that feels both humble and indulgent at the same time… simple ingredients, big flavor, and incredibly satisfying. Think of it as a Hawaiian twist on a Salisbury steak… served over rice and topped with a rich gravy and a perfectly cooked egg (I prefer over easy). It’s affordable, decadent, and filling… and such a fun way to use ground beef. It is also the perfect use for left over beef patties.

Ingredients

For the Patties

  • 1 1/2 lb ground beef
  • 1 tbsp Worcestershire sauce (omit or substitute for nightshade-free)
  • 1 1/2 tsp kosher or sea salt
  • 1 tsp garlic powder
  • 1/2 tsp black pepper

For the Gravy

  • Reserved ground beef fat
  • 1 1/2 cups beef stock
  • 4 tsp shoyu (soy sauce)
  • 1 tsp Worcestershire sauce (omit or substitute if needed)
  • 3/4 cup sliced mushrooms
  • 1/2 cup diced onions
  • 1 TBS cornstarch

For Serving

  • Cooked rice
  • Eggs (1 per serving)
  • Green onions, sliced

Instructions

1. Form and Cook the Patties
In a bowl, combine ground beef, Worcestershire (if using), salt, garlic powder, and black pepper.
Form into patties.

Heat a skillet over medium-high and cook patties until nicely browned on both sides and cooked through.
Remove from pan and set aside… reserving the beef fat in the skillet.


2. Make the Gravy
In the same pan, add mushrooms and onions. Sauté in the reserved beef fat until softened and lightly browned.

In a small bowl, whisk cornstarch with a 3 tablespoons of the beef stock to create a slurry.

Add remaining beef stock, shoyu, and Worcestershire (if using) to the pan.
Bring to a simmer, then stir in the slurry.
Cook until the gravy thickens to a rich, smooth consistency.

Return patties to the pan and spoon gravy over them to keep warm.


3. Cook the Eggs
In a separate pan, melt butter, reserved beef fat or oil
Fry eggs sunny-side up or over easy… leaving the yolk soft.


4. Assemble
Scoop cooked rice onto each plate or bowl.
Top with a hamburger patty.
Ladle generous amounts of gravy over the top.
Finish with a fried egg and a sprinkle of green onions.


Notes

  • For a fully nightshade-free version, skip Worcestershire or use a compliant substitute.
  • The magic is in the layering… rice, beef, gravy, egg… every bite hits differently.

It’s simple… comforting… and one of those dishes that instantly takes me back to island life
