I love tomatoes and things that include tomatoes. Tomato paste is a staple in so many delicious dishes. Sadly, tomatoes are an inflammatory nightshade. Here is a great mock sauce that can be used in place of tomato paste or sauce in your favorite dishes! The beet gives it a red color and earthy flavor. Carrot brings the sweetness of tomato and the lime adds the acidity. Play with the measurements to create your perfect sauce!
Ingredients:
- 2 tablespoons of olive oil
- 1/2 of a yellow onion, chopped
- 1/8 cup of fresh beet, chopped
- 1/2 cup chopped carrot
- 2 large cloves garlic
- 1/2 tsp salt
- 1/4 cup of beef broth
- 3 Tablespoons red wine
- 1 Tablespoon of sugar
- juice of 1/2 a lime
Directions:
Heat the oil in a sauce pan.
Saute the onion until it begins to turn transparent. Add the garlic, carrot and beet. Saute for 5 minutes.
Add the remaining ingredients, cover and simmer for 15 minutes or until the beets are soft.
Puree the “soup” with an immersion blender or in a traditional blender.
Return to heat and reduce until desired thickeness.
Tip: I make a batch ahead of time and freeze it in ice cube trays. Once solid, I transfer my “tomato” cubes to a ziplock bag and store for future use.
