Yummy, garlic chicken over sticky white rice. It reminds me of street food in Honolulu. I make this with inexpensive chicken wings but you can use any kind of chicken.
INGREDIENTS:
- 1 pound chicken wings
- 1/4 teaspoon pepper
- 1/8 teaspoon coriander
- 2 tablespoons olive oil
- 1/4 cup brown sugar
- 1 Tbs sesame seed oil
- 1 Tbs rice vinegar
- 3 tablespoons Soy Sauce
- 2 large garlic cloves, minced
- 1 Tbs onion, grated
- 1 finger of ginger, grated
- 1/2 teaspoon sesame seeds
- 4 green onions chopped
- 1 1/2 cups Japanese rice
INSTRUCTIONS:
Combine all ingredients except for sesame seeds, green onion and chicken to create a marinade.
Marinade chicken for 30 minutes.
Remove from marinade and brown in a skillet with 2 tablespoons of hot oil.
When the chicken in at 140 degrees, add the marinade, cover and simmer until it reaches 165.
Top with sesame seeds, green onion and serve with sticky rice.
