Baked Feta

 

Traditional feta cheese is made with sheep’s milk.  Many people who can not tolerate cow dairy, easily process sheep.  This is a simple and decadent appetizer that will make you a hit at any party.  If you are also avoiding nightshades, you can substitute my mock marina and skip the tomatoes!

INGREDIENTS:

  • 8 oz. block of feta
  • 1 tsp. minced garlic
  • 1/3 cup sliced black olives
  • 1/2 cup sliced cherry tomatoes
  • 1 Tablespoon of Kalamata olives, sliced
  • 1 1/2 Tbsp. chopped parsley
  • 1 Tbsp. chopped basil
  • 1 tsp. chopped oregano (or ½ tsp. dried)
  • ¼ tsp. black pepper, fresh cracked
  • 1 Tbsp. olive oil

INSTRUCTIONS:

  • Preheat oven to 400° F
  • Place block of feta into a small rimmed oven safe baking dish.
  • Add tomato mixture to top of feta, letting it spill over into the dish.
  • Top with garlic, onion, olives, tomatoes and herbs
  • Bake for approximately 20 minutes until cheese begins to melt.
  • Serve with crackers or toast rounds
