Escabeche

Ingredients

  • 1 small red onion sliced thin
  • 2 medium carrots sliced thin
  • 1 radish sliced thin
  • 2 cloves of garlic minced
  • 2 green onions sliced thin and divided
  • 3 TBS chopped cilantro
  • 1 large jalapeno sliced into thin rings (eliminate if NSF)
  • 1/2 teaspoon ground coriander (or 3/4 teaspoon coriander seeds)
  • 1/4 heaping teaspoon ground cumin (or 1/2 teaspoon cumin seeds)
  • 1 1/2 cups apple cider vinegar
  • Juice and zest of 1 lime
  • 2 teaspoons sugar
  • 1/2 teaspoon salt
  • Fresh cilantro

Instructions

  • Cut the vegetables and place them in a bowl
  • Add the white ends of the green onions,reserve the top for garnish.
  • Add the spices
  • Add the vinegar, sugar, and salt to the bowl
  • Add apple cider vinegar,2 teaspoons sugar,1/2 teaspoon salt,
  • Let sit for at least 30 minutes.
  • Add green onion tops and cilantro to finish
