Ingredients
- 1 small red onion sliced thin
- 2 medium carrots sliced thin
- 1 radish sliced thin
- 2 cloves of garlic minced
- 2 green onions sliced thin and divided
- 3 TBS chopped cilantro
- 1 large jalapeno sliced into thin rings (eliminate if NSF)
- 1/2 teaspoon ground coriander (or 3/4 teaspoon coriander seeds)
- 1/4 heaping teaspoon ground cumin (or 1/2 teaspoon cumin seeds)
- 1 1/2 cups apple cider vinegar
- Juice and zest of 1 lime
- 2 teaspoons sugar
- 1/2 teaspoon salt
- Fresh cilantro
Instructions
- Cut the vegetables and place them in a bowl
- Add the white ends of the green onions,reserve the top for garnish.
- Add the spices
- Add the vinegar, sugar, and salt to the bowl
- Add apple cider vinegar,2 teaspoons sugar,1/2 teaspoon salt,
- Let sit for at least 30 minutes.
- Add green onion tops and cilantro to finish
