Friends, let me solve the mystery…. it’s a pressure cooker. Old school pressure cookers -could be a little scary and horror stories abounded. The new style “Insta-pot” often plug in like a crockpot and feature an electronic setting.
Do you want one, yes. It will change your life. You can cook pot roasts, stocks and soups in a fraction of the time. A chuck roast will be fall apart tender in 45 minutes versus 2 and a half hours.
I personally have a Viking stove top pressure cooker and use it weekly. It is easy to use and not the least bit frightening. That being said, pick something in your wheel house. I think an old school pressure cooker works best on gas versus and electric stove. An electric, plug in style certainly has it’s advantages. My only concern would be the ability to heat up quickly.
What I cook: {anything that takes along time}
- Roasts
- Stocks
- Beans
- Oxtail
- Short Ribs
- Pasta sauces
- Stews
- Pulled Pork and Beef
If you have an Instapot or pressure cooker, please chime in. What do you have and what do you love?
