This is perfect for lamb, chicken or beef. Yes, you can buy one but you really have no idea what is in it. This one is night shade free and you control the salt. I make it up in a big batch (quadruple this recipe) and store it in a spice jar. It make it easy to throw dinner together. Dry rub meats or add it to ground lamb.
- 1/8 teaspoon of white pepper
- 1/2 teaspoon coriander
- 1/2 teaspoon cumin
- 1/2 teaspoon turmeric
- 1/4 teaspoon saffron
- 1 teaspoon sage
- 1/4 teaspoon allspice
- 1/2 Tablespoon of dried garlic
- 1 Tablespoon basil
- 1 Tablespoon parsley
- 1/2 Tablespoon of mint
I salt and pepper my meat, not the spice mix. Beef needs more salt than chicken so I like to do it separately. If you are not sensitive to night shades, add a little heat with paprika or cayenne.
Use as a dry rub or as an addition to dice and soups.
