CORNBREAD INGREDIENTS:
- 1 & 1/2 cups of gluten free yellow cornmeal
- 1/2 cup of gluten free flour
- 1/8 cup of sugar
- 2 teaspoons of baking powder
- 1/2 teaspoon of salt
- 1 cup of almond or goat milk
- 1/4 cup vegetable oil
- 2 eggs
- 2 Tablespoons of bacon grease
DIRECTIONS:
- Mix cornbread ingredients (except bacon grease) above until combined
- Heat 2 Tablespoons of bacon grease in a large cast iron skillet. Once nearly smoking, pour in the cornbread mixture. This is the secret to crispy edges.
- Bake in a 400 degree oven until cooked through (20 minutes)
