Gluten Free Southern Cornbread

CORNBREAD INGREDIENTS:

  • 1 & 1/2 cups of gluten free yellow cornmeal
  • 1/2 cup of gluten free flour
  • 1/8 cup of sugar
  • 2 teaspoons of baking powder
  • 1/2 teaspoon of salt
  • 1 cup of almond or goat milk
  • 1/4 cup vegetable oil
  • 2 eggs
  • 2 Tablespoons of bacon grease

DIRECTIONS:

  1. Mix cornbread ingredients (except bacon grease) above until combined
  2. Heat 2 Tablespoons of bacon grease in a large cast iron skillet.  Once nearly smoking, pour in the cornbread mixture. This is the secret to crispy edges.
  3. Bake in a 400 degree oven until cooked through (20 minutes)
