Minted Peas

Ingredients

  • 1 tablespoon butter substitute
  • 2 thinly sliced green onion
  • 2 10 ounce bags of frozen peas, thawed
  • ¾ teaspoon coarse salt
  • ¼ teaspoon ground pepper
  • ⅓ cup finely chopped fresh mint.
  • 1 ½ teaspoons grated lemon zest
  • 2 tablespoons butter substitute

Directions

  1. In a large skillet, melt 1 tablespoon butter over medium-low heat. Add 2 thinly sliced green onions, stirring occasionally until tender (about 2 minutes).
  2. Add 2 packages (10 ounces each) thawed frozen peas, 3/4 teaspoon coarse salt, and 1/4 teaspoon ground pepper. Stir frequently, until peas are tender and heated through (about 5 minutes).
  3. Add 1/3 cup finely chopped fresh mint, 1 1/2 teaspoons grated lemon zest, and 2 tablespoons butter. Swirl the pan until butter is creamy (about 1 minute).
