Hummus is so easy to make and this home made version is heads and shoulders above anything you can buy in the store.
INGREDIENTS:
- 2 cans (15 ounce) chickpeas, drained and rinsed
- juice of 2 lemons
- 1/2 Tablespoon of lemon zest
- 4 cloves garlic, sautéed or 1 TBSP dry
- 1-1/2 teaspoons salt
- 1/2 cup tahini
- 3 tablespoons olive oil {plus extra to drizzle)
- 1/4 cup of water (more if needed for creamy texture)
- Pepper to taste
- Garnish with
- minced parsley
- toasted pine nuts
- cumin
- tumeric
- olive oil drizzle
INSTRUCTIONS:
Place all ingredients in a food processor or blender and pure until smooth. Season to taste, garnish with herbs and pine nuts. Drizzle with olive oil. Serve.
