Green Bean Almondine

You can never go wrong with classic French recipe. This elegant side dish of green beans, almonds, shallots, garlic, lemon zest, and lemon juice is perfect for the holidays! It plates beautiful and add color to your table.

Equipment

  • Covered Skillet
  • Zester

Ingredients

  • 1 lb (16 oz) French green beans, trimmed
  • 2 tablespoons butter substitute
  • ¼ heaping cup raw slivered almonds
  • 2 medium shallots finely diced
  • 2 medium garlic cloves finely minced
  • Zest of one small lemon
  • 2 teaspoons freshly squeezed lemon juice
  • Kosher salt to taste
  • freshly ground black pepper to taste

Instructions

  • Blanch the green beans. Cook the green beans in a large pot of salted boiling water for 2 minutes, until they’re crisp-tender and bright green. Transfer them to an ice bath to stop the cooking process. Then, drain. {Tip this can be done days ahead if you are prepping a big meal}.
  • Toast your almonds in a dry skillet until they brown and become fragrant. Remove from the pan.
  • Sauté the shallot, garlic and green beans. Add oil to the pan and cook the shallot until it softens, about 2 minutes. Add the blanched green beans and cook for a few minutes more, until the beans are warm and tender.
  • Season and serve. Combine all ingredients and top with lemon juice.
