Marinated Mushrooms

Marinated Mushrooms
Dairy, gluten and night shade free

  • 1 pound fresh cremini mushrooms
  • 1/2 cup + 1 tablespoon extra-virgin olive oil
  • 3/8 cup white wine vinegar
  • 1 clove garlic, finely chopped
  • 1/4 cup finely chopped red onion
  • 2 teaspoons finely chopped fresh oregano
  • 2 tablespoons finely chopped fresh Italian parsley
  • 1/4 teaspoon fine sea salt
  • 1/2 teaspoon whole black peppercorns
  • 1/2 teaspoon coriander seeds


Combine all the ingredients.  Refrigerate for at least 3 hours.  If you are short on time, cook the mushroom for 5 minutes in simmering water. This will tenderize them.
