- 15 ounce package of frozen black-eyed peas, thawed
- 3 large cloves of roasted garlic
- 1 lemon, juiced
- 1/2 cup of tahini
- 1/4 cup water
- 1/2 teaspoon of coriander
- 1/2 teaspoon cumin
- 1/4 cup olive oil
- 1 tablespoon fresh flat-leaf parsley
- Kosher salt
- Freshly ground pepper
Combine the peas, roasted garlic, lemon juice, coriander, cumin, tahini and half the oil in a food processor. Slowly add the remaining oil until a smooth consistency is formed. Salt and pepper to taste. Garnish with parsley.
Serve with pita, crackers and vegetables to dip!
