Mint Pea Hummus


  • 15 ounce package of green peas, thawed
  • 3 large cloves of roasted garlic
  • 1 lemon, juiced
  • 1/2 cup of tahini
  • 1/4 cup water
  • 1/2 teaspoon of coriander
  • 1/2 teaspoon cumin
  • 1/4 cup olive oil
  • 2 tablespoons of fresh mint
  • Kosher salt
  • Freshly ground pepper

Combine the peas, roasted garlic, lemon juice, coriander, cumin, tahini and half the oil in a food processor.  Slowly add the remaining oil until a smooth consistency is formed. Salt and pepper to taste.

Stir in chopped mint.  Serve with pita, crackers and vegetables to dip!

YIELD: 4 servings
